Gingerbread Pancakes for Breakfast Tradition

Every year that I've been married, I've been making the same traditional Christmas morning breakfast. I whip up a batch of my famous gingerbread pancakes with warm maple applesauce. When it used to just my hubby and me, we would have a relaxing breakfast, sip our coffee with our pancakes, then open our presents to each other. Now that we have kids the morning routine has changed a bit, as the kids can't wait to open presents until after breakfast. Sometimes we snack on a few Christmas cookies to tide our hungry bellies over until the gifts are open than a serve the yummy gingerbread pancakes. They are absolutely the best and the only day of the year that I make them is Christmas morning. It's a special and tasty Christmas tradition in the Behnke household.
